Abstract

For substantial cell growth and exopolysaccharide (EPS) production of Bifidobacterium longum JBL05, anaerobic conditions (dissolved oxygen concentrations below 0.05 ppm) and the supplement of CO2 (≥ 20%) were required. Under these conditions, B. longum JBL05 produced EPS amounts of up to 2.9 g/l.
